Whether you're hosting a brunch or headed out the door to work, these easy grab and go egg bites are a perfect protein-packed snack or breakfast. These healthy mini frittatas will give you a plant-powered start to your day!

 

Prep Time: 10-15 minutes

Cook Time: 15-20 minutes

Serving Size: 2 Egg Bites

Servings: 6

 

Ingredients:

  • 1 Cup Plant-Based Meat Crumbler
  • 2 Cups Spinach
  • 1 ¼ Cup AcreMade Egg Scrambler
  • 25 fl oz. Water

Directions:

  1. Pre heat skillet
  2. Stir and break down
  3. Add 2 cups of spinach and stir
  4. In a bowl, whisk together egg scrambler and water
  5. Once the egg mixture is a smooth texture, mix in the meat & spinach 
  6. Whisk all together until smooth
  7. Pour mixture into a 12 cup muffin pan
  8. Bake at 325° F for 15-20 minutes
  9. Enjoy!
